Fresh basil pesto

Cooking class time!

Today I'm sharing my favourite basil pesto recipe. Try lah woii, sedappp! :D

Fresh Basil Pesto Recipe
  • Prep time: 10 minutes
Ingredients
  • 2 cups fresh basil leaves, packed
  • 1/2 cup freshly grated Parmegiano-Reggiano or Romano cheese
  • 1/2 cup extra virgin olive oil
  • 1/3 cup pine nuts (toasted lightly)
  • 3 medium sized garlic cloves, minced
  • Salt and freshly ground black pepper to taste
  • Special equipment needed: A food processor
Method

1 Combine the basil in with the pine nuts, pulse a few times in a food processor. (If you are using walnuts instead of pine nuts and they are not already chopped, pulse them a few times first, before adding the basil.) Add the garlic, pulse a few times more.
2 Slowly add the olive oil in a constant stream while the food processor is on. Stop to scrape down the sides of the food processor with a rubber spatula. Add the grated cheese and pulse again until blended. Add a pinch of salt and freshly ground black pepper to taste.
3 Serve with pasta, or over baked potatoes, or spread over toasted baguette slices.

Yield: Makes 1 cup

Ok, itu kata recipe. Realitinya, i don't have a food processor, yang ada cuma blender (sponsored by bapak mentuaku. Tq Ayah!). Juga tidak ku jumpa Parmesan-Reggiano/Romano cheese yang halal. Jadinya telah menderhaka (pinjam istilah Che Mat Gebu) dengan menggunakan Parmesan cheese (sedara terdekat). Tak dosa pun ok, buat je.

Bahan-bahan yang telah disukat, olive oil je tak payah sukat. Tuang ikut suka hati ;p
Rupanya setelah diadun. I wish you could smell this. Ahh
Pesto tastes best with baguette
It tastes phenomenal with pasta - be it spaghetti, fettuccine or penne
Pesto with baguette again. My husband & I love it very, very much

You can keep your pesto in a fridge for many, many days. But of course, ours was scooped clean from the jar on the next day! It's that good.

Try it! Making your own pesto makes a lot of difference. Yang beli siap dah tak akan sesedap yang home made. : )

uhhh freshly made tersgtlah sedap... suka bau dia segarrrr gitu. mine was kept frozen tp dah lama sgt x berapa umph gitu...

Kak Lia - Jgn simpan lama2. Hehe.. Sekali buat, pagi ptg siang mlm ngadap pesto ;p

DLL - itu roast beef, aku sear dulu dlm pan panas, tabur garam sikit, bila dah brown both sides aku transfer dlm oven 250'C. Biar 15 min je, keluarkan. Dia akan slighly pink kt tgh, & very juicy. :D Oh ye, beef aku tebalnya dlm 2.5cm. Try jgn xtry!!
